Acorn Squash is a winter squash with distinctive longitudinal ridges on its exterior and sweet, yellow-orange flesh inside. We like to slice thin, drizzle with olive oil, season with oregano, salt, and pepper, roast at 400 degrees, and top with parmesan. Also great halved, topped with butter and brown sugar, wrapped in foil, and baked.
