Great for braising. This cut is easy to prepare; simply season, brown, then cook low and slow until the meat falls off the bone! We like it in a red wine sauce, but it takes well to all preparations from Greek to Middle Eastern.
Our Dorper flock is 100% grass-fed. During the warmer months, they are raised outdoors and moved daily to fresh pasture. During the winter months, we feed hay and the sheep have access to the hoop houses for shelter from the elements. The result is a mild tasting, lean, healthy meat.
