Shoulder Roast, also known as a chuck roast, makes an excellent meal - similar to a beef chuck roast. Season generously with your favorite herbs and aromatics then slow-roast to medium-rare. Lamb shoulder is also wonderful when braised or barbecued.
Our Dorper flock is 100% grass-fed. During the warmer months, they are raised outdoors and moved daily to fresh pasture. During the winter months, we feed hay and the sheep have access to the hoop houses for shelter from the elements. The result is a mild tasting, lean, healthy meat.
